Petit Fours a.k.a Cute Mini Desserts

In case you didn't know, petit fours aren't just those kinda gross square white cakes with a crusty pink flour on top that you've had at a tea or shower.  Petit four is just a classy french way of saying mini dainty dessert, they can come in tarts, cookies, cakes - just make them tiny. They can even be savory (petit four sale).

A classic french petit four is the french macaroon, more pictures of those to come later this week!


Lemon Goodness

My obsession for lemon (and all citrus) started at a young age.  We had this gigantic lemon tree growing up that my dad wouldn't stop fertilizing and therefore we had huge lemons and lemon juice all-year-round.  My brother became obsessed with juicing the lemons and making lemon ice cubes and fresh lemonade.  Naturally I started baking lemon merringue pies and handing them out to the neighbors :)  It also helped that Dadeo (what my dad call's himself) hates chocolate and LOVES fruity desserts - i'm guessing that's where my affinity for fruit began and my chocolate taste buds started to diminish.

Soooo, it's been ironic that in pastry class I've been assigned to almost every lemon dessert that we have made.  Just call me your resident lemon curd expert.  From lemon mousse to cupcakes and even donuts, i've given it a whirl.  The lemon souffle was so yummy I ate it before I took a pic - whoops.

I made the lemon chiffon cupcakes which remind me of grandma's classic chiffon cake.  I love the look of the roulade and how fun it is to make, I think a pumpkin mascarpone roulade might be in order for the Thanksgiving season!
